Coconuts are highly revered by the local people of Sri Lanka for their versatility as both medicine and food. The coconuts are hand-harvested to produce coconut milk, coconut butter, coconut oil, coconut flour and coconut sugar.
Coconut sugar is sourced from the sap of the coconut palm tree. To harvest the sap, farmers cut into the stem of the palm tree allowing the sweet nectar to flow out. The coconut sap is collected from the coconut palm, then dehydrated to naturally form crystallised sugar granules.
Golden-brown in colour, coconut sugar has a delicious taste of caramel. Coconut sugar is less processed than refined white sugar with higher levels of Iron, Zinc, and Calcium. You can use coconut sugar in place of white sugar in baking recipes, in hot drinks or to sweeten tomato sauces and curries.
