Try this delicious parfait after your meal and enjoy a chia packed zip that will leave you wishing you'd made a bigger portion.
Ingredients
- 300ml coconut milk
- 3 tbsp Desiccated coconut
- 1/2 tsp Vanilla extract
- 50g Chia seeds
- Mango & Passion Fruit Puree
- 1 Ripe mango
- 1cm Piece of ginger (peeled)
- 1 tsp Almond butter
- 50 ml Coconut cream
- 2 tbsp Agave syrup
- 2 Passionfruit pulp
- To serve
- 100g Plant-based yoghurt
- 1 Passion fruit (halved)
- 1 tbsp Coconut flakes
Method
- Prepare the chia pudding by combining coconut milk, chia seeds, vanilla extract and desiccated coconut. Mix well and leave in the fridge to thicken.
- Place peeled mango, ginger, almond butter, coconut cream and agave syrup in a blender and blitz until smooth. Transfer into a bowl and stir in passionfruit pulp and seeds.
- Once the chia pudding had thickened, layer it with plant-based yoghurt and fruit puree in bowls or jars. Top with coconut flakes, passionfruit and serve!
